Our father, Tomiță Copaci, carried this legacy forward, preserving the sanctity of the winemaking craft. Today, we — the Copaci brothers, Mihail and Gabriel — continue this passion, blending the tradition of aging wine in oak barrels with modern technology to create authentic wines full of character.

The Generous Sun: From the first rays of the morning to golden sunsets, the vineyards of Jariștea are bathed in intense and constant light. This prolonged sun exposure, combined with cool nights, ensures a slow and complete ripening of the grapes, concentrating the essential aromas and sugars. It is that “sun” you can feel in every drop of wine — a warmth transformed into elegance and fruitfulness.
The Soil with a Soul: The soils of Jariștea are a complex blend of clay, sand, and limestone, enriched by sediments carried by waters that have shaped the landscape over the ages. This varied composition gives the wines a distinct minerality and a balanced structure, faithfully reflecting the character of the place. The vine roots reach deep into the ground, extracting the very essence of the earth.
The Balanced Climate: Subtle Mediterranean influences meet continental ones, creating an ideal microclimate. Warm summers are tempered by gentle breezes, while winters bring snow that protects the vines, preparing them for a new cycle of abundant fruiting. Rainfall is regular but not excessive, ensuring optimal soil hydration.
